Glass Brasserie is an iconic restaurant and wine bar within the Hilton on George Street in Sydney’s CBD, overlooking the Queen Victoria Building. Its cellar holds more than 3,500 bottles behind a dramatic floor-to-ceiling wine wall, curated over two decades by head sommelier Mauro Bortolato, and around 50 wines are poured by the glass via Coravin.
