Sydney’s only dedicated Champagne bar, on level 3 of the Sofitel Sydney Darling Harbour with panoramic harbour views. The list runs to around 100 cuvees by the bottle and roughly 10 by the glass, and it is the only venue in the city offering French-style sabrage service (the bottle opened with a sabre). French bar snacks such as charcuterie, cheese, caviar and truffle chips accompany the pours, with a full oyster bar on Friday and Saturday. Open Tuesday to Saturday from late afternoon; closed Sunday and Monday.
