L’Effervescence
L’Effervescence is a two-Michelin-star restaurant in Nishi-Azabu that many consider Tokyo’s finest expression of seasonal French cuisine with a deeply Japanese soul. Chef Shinobu Namae trained at Fat Duck in England and brings extraordinary creativity and philosophical depth to his tasting menus, drawing inspiration from Japanese nature and tradition. The name — “effervescence” — is itself a tribute to champagne, and the wine list is exceptional, with particular depth in grower champagnes and rare vintage selections.
