Created by Ēriks Dreibants, one of Latvia’s star chefs, Pavāru Māja is a true gem of Latvian gastronomy offering local farmers and flavours, many intriguing Latvian delicacies with contemporary interpretation, and a dreamy location. It says something about the philosophy of Pavāru Māja if the most expensive champagne on the list is not a ubiquitous big house, but an ambitious biodynamic cuvée created by in-the-know and hip David Léclapart (L’Aphrodisiaque).
